Set sail into deep blue seas with the restaurant’s award-winning tuna cold capellini—a light dish of blue crab meat, caviar and akami yellowfin tuna, topped with chives, yuzu and white truffle dressing. Another equally refreshing option is the fresh salmon tartare, which offers a well-blended variety of flavours. For your main course, try the silver sea bass for Asianinspired flavours coming in a blend of chopped tiger prawn, zucchini, anchovy butter and bouillabaisse mousse. You can also return to the mainland with their selection of meat dishes. Opt for the lamb loin prepared sous vide or a juicy lamb belly, braised for 12 hours and served with fresh herbs, tomato coulis, ratatouille provencal and topped off with lamb jus and Dijon mustard. End your meal on a sweet note with either chocolate fondant or the well-balanced citrusy lemon tart.
