Begin the evening with the chef’s signature tasting for two. Standouts from the five tasters are delicate soft-cured ocean trout perfectly matched with smoked lemon yoghurt, apple and fennel; and pan-seared foie gras, its richness offset by pickled beetroot and mango gel. For mains, order the rich and filling lobster and spider crab risotto matched with a serving of perfectly pan-seared Tasmanian salmon—moist meat with a delightfully crisp skin. In an excellent touch, after each course you are presented with a complimentary amuse bouche and palate cleanser, including a memorable butterfly pea sorbet served in a swirling mist of dry ice. For dessert, look no further than the sphere—a chocolate ball filled with coconut and mango mousse, blood orange sorbet and marinated pineapple. For effect, hot white chocolate is poured over it when served, slowly revealing the intriguing mix within.
