Begin with a refreshing serving of ice plant salad. Its unique, frosted appearance and crisp texture goes beautifully with the accompanying salmon tartare, ponzu foam and fresh oysters. Smoked lamb ribs is a fun finger food platter to share. The smoky meat is well complemented by eggplant caviar and yoghurt. For heartier options, try the perfectly panroasted tenderloin served on a bed of creamy truffle risotto with flavourful black trumpet mushroom sauce. Also recommended is the signature duck soaked in cointreau sauce, which is hang-dried and then seared. The meat is artfully presented with Sichuan pepper gastrique and pomelo for added zest. End with deconstructed banoffee, a decadent combination of Oreo cookie crust, house-made caramel, banana, walnuts and vanilla chantilly. A lighter alternative is the photogenic raspberry panna cotta, intricately served six ways and decked with edible blooms.
