Supanniga’s signature kalum tod nam pla, a simple dish of fried Chinese cabbage with fish sauce, is one of the best. The cabbage is made extraordinary with premium fish sauce from Trat province paired perfectly with jasmine rice. Those looking for something spicier may opt for nam prik khai poo, a flavourful chilli dip of crab roe and crab meat served with fresh local vegetables. While the quality of the ingredients is not to be doubted, the taste may be more suitable for those with a penchant for sweetness, as demonstrated in choo chi goong. Sauteed with Thai curry, the jumbo prawns are very juicy. An alternative for seafood is pad prik leung. The crab meat from Surat Thani is stir-fried with yellow chilli paste for a true taste of the south. Close the meal with the classic mango and sticky rice or Thai tea panna cotta.
