A recommended alternative is a perfectly pan-seared foie gras and creamy terrine—the accompanying roasted mango gives a vibrant tang that beautifully cuts through the richness. For an entree, go for the signature steak of dry-aged Brandt prime sirloin. The dish is exquisitely presented with red wine jus, smooth cauliflower puree, grilled white asparagus, cured beetroot and fluffy beetroot sponge. Similarly enjoyable is the lamb rack, slow cooked until tender and served with fava beans, smoked eggplant puree and dauphinoise potatoes. End with a refreshing yet decadent platter of hazelnut praline cremeux featuring passion fruit sorbet, chocolate crunches, hazelnut streusel, banana cake and banana brulee.
