All the dishes, including somtam thai—usually a dish best purchased from a street food stall—are consistent in their authenticity, employing the essential balance of sweet, sour, savoury and bitter in appropriate degrees. But if you order nothing else, try tom yum pla chon, which explodes on the tongue with a plethora of flavours so numerous yet elusive it is difficult to describe as anything but puzzlingly delicious. All the other less-touted offerings, such as goong sarong or perfectly cooked prawns encased in a crispy deep-fried noodle coating, tick the Thai cuisine boxes of crunchy raw vegetables, slow-cooked tender meat and a multilayered palette of herbs and spices. It is all healthy, hearty and tasty and if the dishes are correctly sequenced and blended they unlock the endorphin boxes so that by the time you spoon in your dessert of kanom krok nam kati, you have achieved a blissful state of mind and body.
