Refresh your palate with complimentary yoghurt spheres that explode in your mouth. Begin with the signature salmon tartare served with sesame rice crackers. Soft cubes of fatty salmon come coated in a sweet nutty dressing with pearls of salty ikura sprinkled on top. For a more adventurous starter, try foie gras and brussels sprouts served with chocolate sauce and cookie crumbs—a dish that takes the sweet and savoury balance to its limits. For a main course, angel hair with Japanese mushrooms and fried sea bass in a nori-shoyu sauce is a Japanese-Italian fusion delight.
