Organic lamb tartare, served with herb mayonnaise, tomato-chilli chutney and goat’s cheese is a good start to a fun meal. For mains, try whole sea crab spaghetti cooked in prawn oil and peppery prawn bisque sauce, a Western dish with a comforting Thai influence. A dish of 55°C Canadian salmon is also a must. It comprises a perfectly cooked slice of salmon crusted with brown butter and complemented by a ginger foam. You'll want to come back for more. For meat lovers, 24-hour pork ribs with home-made coffee and tamarind sauce, and off-the-bone braised lamb shank are recommended. To end the meal be sure to try the fluffiest pancake imaginable. It is served with brown butter whipped cream and maple syrup.
