Chef Bijster serves special four-, six- and eight-course set menus but when ordering a la carte start with the signature east meets west, a delightful fusion of piquant lobster bisque flavoured with lemongrass and kaffir lime poured over chunks of pan-fried lobster and mushrooms. Another fine starter is Hokkaido scallop with pumpkin, brioche and beurre noisette. A light beginning, it contrasts with the richness of a dish of foie gras cooked three ways as a mousse, a pate and pan-fried. From the vegetarian offerings, mushroom risotto is wonderfully rich and creamy. The pungent flavours and aromas of the assorted fungi are deeply satisfying. Those with a big appetite will enjoy the signature wagyu striploin served with gnocchi, carrots, leeks and a velvet truffle sauce. To finish a decadent meal bursting with flavours, try the equally decedent earl grey chocolate mousse with salted caramel sauce and crunchy hazelnuts.
