Food

When available, start the meal with Tasmanian mussels cooked in a lovely white wine, garlic and black pepper sauce. Dress the dish with a dash of lemon as it vibrantly brings out the natural sweetness of the incredibly fresh mussels. Pasta lovers should follow with a luxurious dish of homemade tagliatelle with shaved grana padano cheese and generously topped with four grams of Norcia black truffle. Another recommended signature dish is foie gras ravioli, pasta parcels stuffed with a rich and smooth foie gras filling and topped with decadent black truffle cream and a drizzle of berry sauce. For a main course try char-grilled prime Australian lamb cutlets, simply but also perfectly seasoned with rock salt and herbs. End with a modern representation of the classic tiramisu featuring beautiful layers of fluffy sponge cake, mascarpone cheese, Italian coffee and cocoa.
