Go for the omakase set with the chef creating tasty morsels at the sushi counter in front of you. Alternatively, signature dishes abound including hamachi tacos, a light cold starter filled with raw yellowtail fish, avocado puree and yuzu ceviche vinaigrette. Also good is oyster foie gras, an indulgent dish of three plump Hiroshima oysters with seared foie gras and uni in a sweet soy sauce with coriander. Both are excellent with a glass of sake. Sushi, sashimi, maki rolls, ramen noodles and burgers are on the menu, as are grilled steaks, but for a main course try hamachi kamayaki or char-grilled jaw bone of yellowtail with sea salt. Cooked crispy on the outside, the white meat of the fish is tender and thick and goes well with ponzu sauce. Morimoto-style chirashi comes splendidly arranged with 10 kinds of raw fish cubed in a bowl of sushi rice. A trio of the chef’s daily selected sorbets cleanse the palate at the end of the meal.
