Setting

The stunning Four Seasons is reason enough to go, but newly revamped Khao offers diners a splendid vantage over the flickering lights of paddy fields towards moonlit mountains beyond.

Food

It is best to allow the chef to guide you through what is a very sophisticated menu of heirloom recipes reimagined. Dishes here celebrate various Thai cooking methods: steaming, frying, charcoal broiled, braised and so on. Start with a signature rice from one of the regions before ordering an assortment of dishes to share. A good selection for a small group would be the surprisingly traditional flavours of larb, but decadently made with lobster instead of the plebian pork, or the tangy flavours of tenderly roasted pork leg in a smoky sour soup cooked in a clay pot. There are many familiar Thai dishes served with a creative twist, such as steamed whole sea bass confit in lime and garlic, which stays true to Thai tastes but with the addition of seaweed and lemon caviar. The uninitiated will find aromatic warm sticky rice porridge with dry longan and warm durian the gentlest way to try the pungent king of fruits.
