Crab salad is a highlight dish featuring the very latest fashion in fish seasoning, bottarga, which is a dried salted block of cured fish roe that imparts a fishy umami element. If you want a quick snack look no further than the brick oven pizzas laden with exquisite ingredients. Deconstructed caprese salad uses vine cherry tomatoes and small balls of mozzarella, pesto and aged balsamic dressing to make a fine starter. Be sure to try roasted calamari accompanied by lentils flavoured with the squid’s black ink. Paella for two is a platter of fluffy saffron rice studded with seafood. For heartier fare the grill offers Australian beef tenderloin, fire roasted 150-day grain fed beef rib-eye and highly prized Japanese kurobuta pork cooked to order and served with a variety of sauces and vegetables.
