Start with coconut saffron prawns marinated in lemon grass, garlic and spices and served in a fragrant saffron sauce. Follow with salmon and dory fillets cooked in three distinct ways for a triple taste of the sub-continent. Tandoori rack of lamb is full of flavour, having been marinated overnight in a potpourri of traditional spices, and char-grilled to your liking. Kashmiri lamb rogan josh has a punch to satisfy the spicier palate, as does classic Goan vindaloo prepared with tender chicken, potatoes and a kick of tamarind. Dal flambe is a must-try dish of yellow dal tempered table-side with butter, cumin, red chillies and then flambeed with cognac. Vegetarian and nonvegetarian set menus served thali-style take ordering decisions off your shoulders and constitute a tasting menu of 10 items. For dessert look no further than the classic gulab jamun flamed at table with Cointreau and a raspberry sauce served with ice cream.
