Ginja Taste’s chef Tanasub Trisub is a Phuket native and grows many of the herbs used in his recipes. He also works closely with local fishermen who bring him choice crabs, fish and other types of seafood landed fresh daily. He presents two special set menus featuring his exceptional cuisine. The Ancient Wild menu offers authentic Phuket tastes such as moo hong som, stewed pork with cinnamon, ginger and lychee, and his grandmother’s favourite, turmeric infused fish and coconut soup. The other specialty menu features a selection of fresh local soft shell crab, poo nim, prepared with different cooking styles. Recommended is crispy fried crab with tamarind sauce and fried shallots. Both blue and black crabs are offered in dishes such as the popular gang kati mee hoon, crab with red curry and coconut milk sauce. These special menus are complemented by a range of popular Thai dishes available a la carte.
