Tasting menus of 10 or 14 courses offer a culinary journey across Asia. Begin with chilled mango and pumpkin soup, the flavour lifted with a variety of distinctive pickles. Follow this with a stellar chicken liver parfait comprising frozen slivers on toast imaginatively paired with longan berry. Char-grilled baby corn arrives with a dip that is a sublimely smooth sauce of corn and milk. Also try blue swimmer crab served in a whey sauce that has a rich, creamy, cheesy flavour. For something more substantial try the main course of the melt-in-the-mouth grilled pork rib topped with pomegranate seeds, spring onions and shallots. Alternatively, a lamb dish is served in a light bread loaf filled with juicy minced lamb. To end, a must experience dessert is the organic red rice cone with ice cream and pork floss.
