Start with deep-fried taro with seafood from the dim sum selection. Crispy and moreish, the inside is creamy from the taro and redolent of the sea. Other recommended dim sum offerings are prawn cheung fun and the scrumptious har gao. Good alternative options for appetisers are barbecued pork with osmanthus flower honey sauce or classic fried fish maw with crab meat and dried scallop. Taking the limelight is the signature peking duck. Roasted over lychee-wood, the skin is crispy and the smoky aroma is further enhanced with dry lychee served with the thin, delicate pancakes. Once the crispy duck skin has been removed, sliced and served, the meat can then be cooked according to choice—recommended is to have it pan-fried with garlic and soy sauce or wok-fried with bamboo shoots and shitake mushrooms. Another excellent option for a main course is the foie gras hand-made rice noodles with scallops. End with freshly-made sesame dumplings in ginger-rose tea.
