Setting

This is Chiang Mai’s first molecular gastronomy restaurant and diners have enjoyed many exciting offerings, but with new ventures opening up in the past year, there have been a few new dishes added to the menu. If you haven’t been, there are some items worth the short drive out of town to try.

Food

The chef will likely present you with an amuse bouche of nitro-poached fruit du jour foam, whether it is guava, lime, apple or mango, making for a dramatic start to the meal. Seafood platter is a great starter and comes with four different bites: an edible black ‘shell’ and mussel foam, a salmon tartar with salmon caviar served on baby cos, a yuzu marinaded tuna sashimi served on a half lime bed topped with caviar and a pesto prawn cocktail served in a shell. Another intriguing dish to try is wagyu tartare served with charcoal ice cream sprinkled with clovers, which arrives like a freshly turned patch of earth in a spring garden. A highlight dish which is consistently good is the sous vide chicken served on a nest.
