Setting

With only three tables, this artisanal and experimental kitchen sits humbly above a gelato shop. Its walls are lined with bottles of pickles and other experimental ingredients—coconut worms marinated in sake, anyone?—which the eponymous chef Black, or Phanuphon Bulsuwan, draws on to combine with his daily foraging of the freshest and best produce tocreate unique one-time-only degustation experiences.

Food

You don’t. There is a nightly degustation menu ranging from nine to 11 courses, which tends to be seafood-heavy and inspired by Japanese cuisine but which can easily encompass any world cuisine that tickles the chef’s fancy on the day. Dishes comprise multiple and complex components, not all of which work but most of which are impressively creative. Expect dishes such as the Lanna starter of tuna moo yor sausage, tai pla green chilli dip, fermented soy bean ratatouille and two types of fermented sausages, or grilled sea bream with onsen egg and sauce of prawn head paste with Phatthalung sago palm balls, or larb duck gyoza with grilled cabbage, crispy rice, duck black pudding and rice sausage with balsamic lotus stem.
