Start with wagyu beef tartare, which is hand-chopped beef tenderloin dressed with barbecue sauce, truffle, mullet egg and crunchy celery. Also good is salmon crudo with turnip spaghetti, wilted spinach and salad with a sweet and sour mango dressing. Seafood platter is a signature dish and can be shared between two. It includes sea bass, tiger prawns, rock lobster and scallops all grilled to perfection and served with rice and sautéed vegetables. Oven-baked salmon cannelloni with a saffron mustard sauce is finished with parmesan shavings. It is an enjoyable main course, albeit quite filling. If you have room for dessert, try lemongrass-infused creme brulee or the signature warm guanaja dark chocolate fondant with chocolate sauce and vanilla ice cream.
