Classy yet relaxing, this resort boasts arguably the best spot to catch sunsets on the island and quite possibly the whole region. Airbar is the place to start with cocktails over the Gulf of Thailand. Diners may have to pinch themselves a few times—it doesn't get better than this.

Koh Samui free range duck spring rolls served with hoisin sauce is the house starter of choice, followed by yum neua, a salad topped with delectable seared sirloin. Duck red curry from the curry pot section is smooth in texture with a kick to the palate. Or try chicken masala with blended coriander, tamarind, lemon and chilli. It is a fun dish to pass around the table and share. Pad thai is served eloquently yet keeps the local theme alive, giving diners a choice of chicken or prawn. Gaeng mee samui comes highly regarded. The savoury curry, crispy noodles and plentiful seafood mixture is incredibly pleasing. Conclude with mango and lime sorbet, much welcomed by the palate after a meal filled with all sorts of yummy spices.
