Both of the signature nine-course degustation menus are outstanding and include house specialties such as 45-minute slow-cooked egg on a parmesan cheese fondue with black truffle and crispy pancetta powder; yellow fin tuna tartar with burrata cheese and smoked caviar; and homemade Trenette pasta with vongole, Maine lobster and bottarga. All the pastas and even simple dishes, such as the wood-fired gourmet pizzas, beef carpaccio with pickled artichokes and wild rocket salad, seem to take on magical properties of taste and flavour when prepared by Frau’s large team in his exemplary modern kitchen. The magic extends to the dessert selection. Sebadas, traditional Sardinian fried pastry stuffed with young cheese and eucalyptus honey, is not to be missed.
