Tucked in an unexpectedly idyllic nook of the Siam Kempinski Hotel, the Michelin-starred Sra Bua by Kiin Kiin is known for its seasonal set menus, and this winter will be no exception.

Inspired by a combination of florals and the romantic elements of the winter months, Sra Bua’s head chef Chayawee Suthcharitchan and chef Henrik Yde Andersen have devised a ‘Winter Journey’ set dinner menu comprising eight courses designed to satisfy the tongue on cooler days.

Begin with Sra Bua’s renowned ‘street food’ bites, served prior to the beginning of the course. A cute egg-shaped nibble offers a contemporary take on the local favourite pad krapow, with chicken heart and eggplant served in basil-flavoured foam, topped with a miniature birds egg. The marshmallow Chinese bun filled with sweet pork has a softness comparable to the clouds, and there’s also kanom krok topped with caviar and a soya meringue served with wasabi mayo. Our favourite of the bites, however, is the Lotus in Lotus Salmon, a Thai styled raw salmon starter served with ginger, soya and lime and presented in a lotus floating in a glass bowl.

Each of the eight courses has a different concept, all of which are playfully flavourful. A rich tom klong is served with a juicy grilled lobster head and a fresh lime and prawn cracker aioli. The beef ceviche that follows is complemented with avocado in spicy marinade, while the green curry risotto gives you a more filling dish. A satay-grilled octopus is prepared right by your seat, served with a sweet grilled onion peanut sauce and onion tapioca.

The tom kha corn and chicken that follows plays with liquid nitrogen, providing an interesting cold version of the typically hot soup in an aesthetically dreamy presentation. The roasted foie gras that follows, served with a mushroom and five spiced pork ravioli and mushroom bouillon, is the most westernised of the course, providing a creamy and delectable end to the savoury portion of the meal.

For an enchanting finale, the course wraps up with two desserts: cherry rose served with lychee foam and sticky rice with seasonal fruits.
