Thai-based fine-dining aficionados are no strangers to the InterContinental Hua Hin Resort. A favourite amongst gourmet foodies, the luxury resort is known for its one-of-a-kind gastronomic experiences, from exclusive celebrity chef dinners to visiting culinary gurus from Michelin-starred venues all across the globe. InterContinental Hua Hin takes things a step further by launching a whole new concept at its in-house Azure Restaurant & Bar. Making an effort to “do something truly different to what’s offered at similar restaurants in Hua Hin,” according to general manager Michael Janssen, guests can expect "refined, straightforward cuisine in a beachfront setting that perfectly complements the food.” Idyllically located right by the private beachside of InterContinental Hua Hin Resort, Azure Restaurant and the rooftop-esque Azure Bar upstairs offer a prime spot to while away your evenings and take in the beach getaway staples of sunsets, sand and sea. For those looking to plan a food-centric getaway to Hua Hin, here’s what Azure Restaurant & Bar has in store.
Azure Restaurant has introduced an all new cuisine concept that prioritises fresh ingredients for a top-quality dining experience. Hua Hin is well known for great seafood, and Azure Restaurant takes inspiration from local community traditions to create a gourmet experience that centers around freshly caught seafood and premium ingredients. Dubbed the “farm and sea to table” concept, all undersea ingredients are supplied daily by the surrounding fishing villages in the area while all fruits, vegetables and meats are locally grown or produced at nearby farms. The restaurants’ raw bar boasts local and imported delicacies that range from half-shell oysters to jumbo prawns, crudo and ceviche among others.
The result is an exciting menu of contemporary dishes, made up of the best components from juicy lobster to tomahawk beef. The ‘Chefs Jon Salad’ and ‘Mavocado Tuna’ provide a refreshing entree to your meal by the beach, while flavourful main courses such as the ‘Seafood Paella Thai Style’ satisfy you with generous oyster portions and aromatic lobster. There’s an interesting DIY element with the ‘Hua Hin Seafood Pot’, where diners can enjoy a warm broth and mix in herbs and spices such as chilli, garlic, lime and cilantro according to personal preference. The star of the show however is hands down the ‘Tomahawk Steak’. Prepared sous-vide for three hours to achieve a full tenderness, the steak is then lightly grilled for an aromatic, melt-in-your-mouth result. The meal comes to a finale with the delectable ‘Azure Grand Dessert Platter’, which sees an aesthetically satisfying presentation of sweet-treats such as tiramisu, pink chocolate bites and a globe of white chocolate filled with sorbet.
Upstairs at the rooftop, Azure Bar managed to bring a taste of Bangkok’s J Boroski to Hua Hin. World-acclaimed mixsultant—as he calls himself—Joseph Boroski has personally curated a selection of bespoke cocktails for the popular coastal Thai venue. Featuring a selection of imaginative classics, the cocktails are carefully crafted from selected spirits and a twist of local ingredients such as lemongrass. Originally from New York City, Joseph Boroski has been bringing his vanguard approach to aperitifs everywhere across the globe, from the Amalfi coast to Cape own and even the French Riviera.
