Just like how wine pairing is essential to good food, the pairing of chefs and restaurants can also make or break the meal. Treating their clientele with a change of scene, Scarlett Wine Bar & Restaurant will be hosting chef Tam, or Chudaree Debhakarn, winner of Top Chef Thailand, this November 23-27.

For five nights, diners will be able to enjoy seven irresistible à la carte menu items created in collaboration between chef Tam and Scarlett’s in-house team. Translation: be prepared to experience a perfect blend of Thai elements and French cooking techniques.  

Start off the meal with chicken liver mousse with spiced tamarind and grilled sourdough before moving on to contemporary dishes that range from whole quail with a pork and chicken stuffing, butternut squash ginger purée and sweet peas, to succulent spice rubbed beef ribeye with smoked peanuts and fennel purée. There’s also the lamb shank massaman curry pie with creamy mash and baby vegetables.

Those who want something from the sea can opt for the cured sea bream with local citrus and lemongrass oil or the grilled tiger prawns with charred Romesco, grilled greens and a prawn reduction. Don’t forget to top off the meal with sticky banana brioche with toasted rice ice-cream for dessert.

More About The Guest Chef "Tam"

What is truly amazing about the collaboration is the fact that chef Tam will make her debut as the first female guest chef at Scarlett Wine Bar & Restaurant and the fact that at such a young age of 24, chef Tam is the very first winner of a globally franchised TV reality show, Top Chef—the Thailand edition. During the competition, her young creativity and saw her winning over 14 other top executive chefs from renowned restaurants nationwide. A graduate of Nutrition and Food Science of the University of Nottingham, UK, Tam has worked as a sous chef alongside Dan Barber, award-winning chef of Blue Hill at Stone Barns, New York. The restaurant, which is an advocate for locally sourced seasonal ingredients, is known as one of the best dining experiences in America and ranked number 11 in the World’s 50 Best Restaurants, 2017.
